Recipe of the Week

Chicken Spaghetti Casserole

Ingredients

1 rotisserie chicken
1 can cream of chicken soup
8 oz spaghetti noodles cooked
2 cups water
1 cube chicken bullion
¼ bar Velveeta cheese cubed

Directions

Preheat oven to 350. De-bone chicken and cube. Add water and chicken bullion in saucepan and heat until bullion is dissolved. Add Velveeta cubes to water and stir until melted. Add cream of chicken soup, mix well. Pour mixture onto cooked spaghetti noodles, add chicken. Mix well. Pour into 9X9 casserole dish and cover with foil. Bake for 30 minutes.

Ghost and Goblins Beware

Halloween is right around the corner and it will be time to get your little ghosts and goblins ready for trick-or-treating. Halloween is a cherished tradition but the excitement of the night can cause children to forget to be careful. There is no real "trick" to making Halloween a real “treat” for the entire family. The major dangers are not from witches or spirits but rather from falls and pedestrian/car crashes. Both children and adults need to think about safety on this annual day of make-believe.

Halloween Safety:

  • Make sure that an adult or an older responsible youth will be supervising the outing for children under age 12.

  • Plan and discuss the route trick-or-treaters intend to follow. Know the names of older children's companions.

  • Instruct your children to travel only in familiar areas and along an established route.

  • Teach your children to stop only at houses or apartment buildings that are well-lit and never to enter a stranger's home.

  • Establish a return time.

  • Tell your youngsters not to eat any treat until they return home.

  • Review all appropriate trick-or-treat safety precautions, including pedestrian/traffic safety rules.

  • Pin a slip of paper with the child's name, address and phone number inside a pocket in case the youngster gets separated from the group

Chocolate Cherry Cake with Chocolate Glaze

Ingredients

Cake: Glaze:

1 chocolate fudge cake mix 1 cup sugar
2 eggs 5 tablespoon butter
1 teaspoon almond extract 1/3 cup milk
1 can Comstock cherry pie filling 6 oz chocolate chips
Maraschino cherries

Directions

Cake – Preheat oven to 350. Coat 13X9” pan with non stick spray. Combine eggs and almond extract in large bowl and beat well. Add cake mix and pie filling, blending well. Batter will be thick and lumpy. Pour into prepared pan. Bake 25-30 minutes. Leave in pan, cool slightly.

Glaze – Combine sugar, butter and milk in medium saucepan. Bring to a boil stirring constantly. Let boil 1 minute. Remove from heat. Add chocolate chips and blend until smooth.
Pour glaze onto warm cake immediately. Chill cake. Add cherries to top of cake if desired and serve

Recipe of the Week

Chipotle Chicken Salad

Ingredients

1 rotisserie chicken
1 red or yellow bell pepper, chopped
½ large red onion, diced
2 green onions, white and light green parts, thinly sliced on the bias
¼ cup chopped fresh cilantro
½ cup mayonnaise
¼ cup canned chipotles in adobo sauce, finely chopped
1 tablespoon fresh lime juice
½ teaspoon sea salt
pinch ground black pepper

Directions

Pull the chicken meat into shreds with your fingers, discarding skin and bones. Combine chicken, bell pepper, red onion, green onion and cilantro in large bowl. Stir the mayonnaise, chipotles, lime juice, salt and pepper together in small bowl. Combine with chicken and vegetables. Taste and adjust seasoning, adding additional chopped chipotles if desired. Chill until ready to serve.

Paper Shredding Event

On Saturday, October 18 from 8:00am - 12:00pm, the Beautification Commission will host a Free paper shredding event at the Meadowpark Athletic Complex. Bedford residents may bring up to three boxes of paper documents to be shredded. Paper clipped and stapled documents will be accepted and there is no limit on the size of the boxes. Proof of residency will be required.

Rattle Snake Eggs

Ingredients

2 cans crescent rolls
1 lb ground breakfast sausage
1 bar softened cream cheese
2 tablespoon diced Jalapenos

Directions

Preheat oven to 350. Brown sausage and add jalapeños. Stir in cream cheese until well blended. Unroll crescent rolls and separate each triangle. Fill center of triangle crescent roll with a spoon full of sausage mixture. Fold sides of triangle around mixture and roll to seal closed. Bake on cookie sheet for 8-10 minutes or until crescent rolls are golden brown.

Can substitute sausage for beef. Can add more or less jalapenos to taste.

In 2008, Susan G. Komen for the Cure celebrates the 25th anniversary of the Komen Race for the Cure, the largest series of 5K runs/fitness walks in the world, with well over 1 million participants since 2005.
