Recipe of the Week

Enchilada Casserole

Ingredients

2 lbs hamburger meat
1 package taco seasoning
1 can cream of chicken soup
1 can enchilada sauce
4 cups shredded cheese
10 flour tortillas

Directions

Preheat oven to 350. Brown hamburger meat and add taco seasoning. Stir in cream of chicken soup and enchilada sauce. Let simmer 5 minutes. Use a 13X9” casserole dish. Cut tortillas in quarters. Layer ½ tortillas, ½ meat mixture and 2 cups of cheese. Repeat. Bake for 30 minutes or until bubbly and cheese is melted.

Garnish with sour cream and chopped jalapenos.

Backpack Safety Month

Now that we're back in the full swing of the school year...did you know that September is National Backpack Safety Month? Here are some tips to help the kiddos out for the school year:

Backpacks are an excellent tool for children when used properly. But before you buy that trendy new backpack your kid or teen has been begging you for, consider the backpack's construction.

The American Academy of Pediatrics (AAP) recommends that parents look for the following when choosing the right backpack:
  • a lightweight pack that doesn't add a lot of weight to your child's load (for example, even though leather packs look cool, they weigh more than traditional canvas backpacks)

  • two wide, padded shoulder straps - straps that are too narrow can dig into shoulders

  • a padded back, which not only provides increased comfort, but also protects your child from being poked by sharp edges on objects (pencils, rulers, notebooks, etc.) inside the pack

  • a waist belt, which helps to distribute the weight more evenly across the body

  • multiple compartments, which can also help distribute the weight more evenly

Although packs on wheels (which look like small, overhead luggage bags) may be good options for students who have to lug around really heavy loads, they may be less practical than traditional backpacks because they're extremely difficult to pull up stairs and to roll through snow. Check with your child's school before buying your child a rolling pack; many schools don't allow them because they can pose a tripping hazard in the hallways.

Going Green

How can you be green in your apartment?

Conserve Water
Conserve Energy
Conserve Trash

Conserve water by notifying the management office immediately if there is a leak in your apartment. Don't let toilets run or faucets drip.

Conserve energy by replacing light bulbs with Compact Fluorescent Lightbulbs (CFL's) throughout your apartment. CFL's consume 75% less energy and last longer than a regular bulb.

Conserve trash by reusing and recycling. Start simple with recycling cans, water bottles and paper. Use the recycling dumpster located in the east parking lot of the community.

Dog Day at Splash

Join Bedford Splash and let your pooch chill out before the end of Summer. On Saturday, September 6th from 1pm-5pm your four-legged friend can enjoy swimming and participate in contests for best costume, diving and retrieving.

Pre-registration is required and no entries will be accepted after 5pm on Friday, September 5th. All dogs must have proof of their current rabies vaccine to participate and there is a $5.00 entry fee per pet.

Labor Day Holiday

Labor Day is a United States federal holiday observed on the first Monday in September. The holiday originated in 1882 as the Central Labor Union(of New York City) sought to create "a day off for the working man".
